Smothered Cheesy Baked Chicken 

 Here’s a recipe for smothered cheesy baked chicken with mushrooms that’s also low in carbs:


  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Chopped fresh parsley for garnish (optional)


  1. Preheat your oven to 375°F (190°C). Grease a baking dish large enough to hold the chicken breasts in a single layer.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and transfer it to the prepared baking dish.
  4. In the same skillet, add the sliced mushrooms and minced garlic. Cook for 3-4 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
  5. Spread the cooked mushrooms and garlic over the chicken breasts in the baking dish.

  8. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  9. Remove the foil from the baking dish and broil for an additional 2-3 minutes, or until the cheese is golden brown and bubbly.
  10. Remove the baking dish from the oven and let it rest for a few minutes before serving.
  11. Garnish the smothered cheesy baked chicken with chopped fresh parsley, if desired, and serve hot.
