Slow Cooker Chicken Noodle Soup

Ingredients:

  • 2 large boneless, skinless chicken breasts, about 1.5 pounds
  • ½ lemon, juiced
  • 3 tbsp fresh parsley, finely chopped
  • salt and pepper, to taste
  • 1 medium yellow onion, diced
  • 1 tsp dried thyme
  • 4 medium carrots, sliced into rounds or half moons
  • 1 tsp dried rosemary
  • 8 ounces Egg noodles
  • 2 dried bay leaves
  • 4 stalks of celery, sliced
  • 8 c chicken stock or broth
  • 4 cloves garlic, minced


Instructions:

  1. Add the chicken breasts, garlic, carrot, onion, celery, thyme, rosemary, chicken stock, salt, pepper, garlic, and bay leaves into the slow cooker. Stir everything until well incorporated.
  2. Cover and seal the slow cooker, then cook the mixture for about 6 to 8 hours on a low setting.
  3. Transfer the chicken breasts onto a clean plate, then use two forks to shred them into small pieces.
  4. Put the shredded chicken back into the slow cooker, then stir until well combined.
  5. Add the egg noodles, then stir until completely submerged. Cook for 5 to 10 more minutes.
  6. Add fresh parsley and lemon juice, then stir until well blended.
  7. Serve right away. Enjoy!
